VIRGIN ISLANDS SEASONED RICE

INGREDIENTS:
* 1 lb salt ham or pork
* 1/2 lb salt fish
* 1.5 qts. water
* 1 small onion
* 1 sprig thyme
* 1 sprig parsley
* 1 stalk celery
* 1 clove garlic
* 3 cardamom seeds crushed OR 1/8 tsp ground cardamom
* 1 can (8 oz) stewed tomatoes or tomato sauce OR 2 fresh tomatoes
* 3 tblsp butter
* 3 cups rice
Directions:
1.Soak salted meats and fish overnight.
2.Discard water, cut meat into small pieces and put to cook until tender.
3.Add chopped-up vegetables and herbs.
4.Pick fish into a few small pieces and add, continuing to cook.
5.Add tomato and simmer for a few minute.
6.Add rice and butter and cook until rice grains are soft and liquid is absorbed.
*When using leftover meat and fish, simmer the meat with the vegetables and add the fish at the same time as the rice.
