Mutton Stew Recipe

Yield: 4 servings
INGREDIENTS:

2 pounds goat, cut into chunks
Salt and pepper to taste
3 tablespoons olive or peanut oil
2 tablespoons butter
2 onions, finely chopped
2 garlic cloves, crushed
1/4 pint to 1 pint of stock (to cover)
Few sprigs of fresh thyme
2 tablespoons mild curry powder
4 carrots, coarsely chopped
4 potatoes, peeled and quartered
2 large tomatoes, diced
Few sprigs of chopped parsley
Directions:
1. Season meat with salt and pepper to taste.
2. Heat oil and butter in a deep, heavy pan.
3. Braise meat until browned.
4. Add onions and garlic and saute until translucent.
5. Add water or stock, thyme and curry.
6. Reduce heat to low and simmer for about 11/2 hours in a covered pan.
7. Add carrots, potatoes and tomatoes and simmer another 30 minutes.
8. Garnish with parsley. Serve over rice.
