VIRGIN ISLANDS MAUFI (MAUFFAY) RECIPE

Maufi is a thick soup made of fish and meats with vegetable seasonings and thickened with cornmeal. Smoked turkey can be used instead of pork for those of us who do not eat pork.
Ingredients:
1/2 pound cooking ham, pig's tail and salt beef
1/2 pound boned fish
1 1/2 quarts water
1 sprig thyme
1 sprig parsley
1 stalk celery
1 small onion or 2 heads chibble
1 can (8 ounces) tomato sauce
OR 1/2 can (8 ounces) tomato sauce
1 cup cornmeal
1 silver hot pepper
Directions:
Soak raw meat overnight, discarding the water. Cut up meat and boned fish and put to boil with the water until tender. Add the vegetables and seasoning and cook about 10 minutes longer. Mix the cornmeal with a small amount of water until smooth, add to the soup, stirring well, and cook a few minutes longer. Add the silver of hot pepper and serve hot.
This is a good dish to make with leftover ham or other meat and leftover fish cooked by any method and boned. Cut up the meat and fish, combine with vegetables and water, and cook until the vegetables are tender. Complete cooking as described above.
