VIRGIN ISLANDS BAKED JOHNNY CAKE RECIPE #2

INGREDIENTS:
* 2 ½ cup of sifted flour
* ½ cup of shredded coconut
* 2 tablespoons of shortening
* 1 tablespoon of margarine
* ½ teaspoon of salt
* 2 teaspoons of baking powder
* ¾ cup of coconut milk
* 2 tablespoons of sugar
Directions:
1.Sift together flour, salt, sugar and baking powder.
2.Add shortening and margarine and work gently with fingertips.
3.Add coconut.
4.Add coconut milk until a soft pliable dough that does not stick to the bowl is formed.
5.Knead gently.
6.Roll into balls.
7.Flatten on lightly floured board and bake on greased sheet at 400 F
8.Fry Johnny Cake on both sides until golden brown
