VIRGIN ISLANDS JOHNNY CAKE RECIPE #1

INGREDIENTS:
* 2 cups flour
* 1 teaspoon of baking powder
* 1 teaspoon of sugar
* 1 teaspoon of salt
* 2 tablespoons shortening
* 1/3 cup of warm water
* Oil for deep frying
Directions:
1.Combine flour, salt, and baking powder in bowl.
2.Add shortening and mix together until ingredients are crumbly.
3.Slowly add water and mix well until a smooth, stiff dough is formed.
4.Knead thorough, but lightly until all lumps have disappeared.
5.Place dough on a flour board and cover with a damp towel for thirty minutes.
6.In deep pot, pour in oil to a depth of 3 to 4 inches and heat.
7.Roll small pieces of dough into balls and flatten or roll out dough to about ½ inch thickness.
8.Fry Johnny Cake on both sides until golden brown
9.Drain on paper towel.
