VIRGIN ISLANDS ICING RECIPE

* 1.5 cups sugar
* 3 egg whites
* 6 tblsp. cold water
* 1/4 tsp cream of tartar
* 2 tsp. corn syrup (white)
* 1 tsp almond essence
Directions:
Put all ingredients except almond essence in top of double boiler.
Cook over boiling water while beating with rotary beater for 7 minutes or with an electric beater for 4 minutes, or until icing is stiff enough to stand in peaks.
Add essence, a few drops at a time and continue to beat until smooth.
