DOCOUNA RECIPE
Serves 1 hungry person

* 2 cups of sweet potato, grated
*1 cup of coconut, grated
*½ cup of sugar
* 2/3 cups of water
*2 cups of flour
*¼ teaspoon of cinnamon
* ½ teaspoon of salt
* ¼ cup of raisins (optional)

Combine sweet potato, coconut, sugar and water in a large bowl.
Mix thoroughly. Combine flour, cinnamon, black pepper and salt.

Add dry ingredients sweet potato mixture.
Combine well until a thick batter is formed.
Add raisins if desired.

Tear aluminum foil to desired size (approximately 12” x 8”).
Place two heaping spoonfuls of mixture onto center of aluminum foil.
Bring ends of foil together;
fold closely over mixture, folding each end several times to seal.

Place wrapped mixture into rapidly boiling water and cook for 30 minutes.
Removed from water and serve with salt fish, etc.
