Coconut drops

Coconut drops
Oven preheated at 350.

  • 1/2 cup sugar
  • 1 egg beaten
  • 1 stick unsalted butter
  • bitters (i use vanilla extract and almond extract a mix of both heavy on the vanilla)
  • 3 cups flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 2 cups of coconut (I like using 1.5 cups of fine grounded up Coconut powdered and .5cups of Large Shredded coconut so you have nice big chunks of coconut in your drops but not so overpowering that its hard to swallow lol.)
  • 1/2 cups of Raisins black are typical but you can use white or a mixture of both.

    Cream butter and Sugar add egg and vanilla then slowly add Dry ingredients and mix well you will need to add water to moisten and you want it to be a very moist sticky consistency. Depending on how big you make them 20-30 mins until nicely golden on the top. I do this all by hand not a dough mixer or food processor. I also do not use the raisins.. as we don't care for them but When I do make them for company I FOLD in the raisins last trying not to rip them so they can get nice large plump unbroken raisins in the drops.
