VIRGIN ISLANDS CONCH FRITTERS RECIPE
(Adapted from native recipes, University of the Virgin Islands, Cooperative Extension Service)
INGREDIENTS:
* 2 cups water
* 1 tbs.. accent
* 1 tbs.. garlic powder
* 1 tbs.. seasoned salt
* 1 tbs.. black pepper
* 3/4 tbs.. thyme
* 4-6 cups self-rising flour
* 3 lbs. conch meat (fresh ground)
* 1/2 cup ground sweet pepper
* 1/2 cup ground carrot
* 1/2 cup ground onion
* dash hot pepper sauce
Directions:
1.Heat the oil in large pot or deep fryer to 365F (185 degrees C)
2.Mix together first 6 ingredients
3.Add enough flour to form a thick batter
4.Then add the remaining ingredients.
5.In a bowl, mix flour and water. Batter should be stiff enough to roll like a meatball.
6.Mix in the conch meat, ground sweet pepper, ground carrot, ground onion
7.Roll in flour and drop into oil heated to 350 degrees.
8.Cook until brown.
9.Serve with tangy cocktail sauce and tartar sauce.
